01 / THE LOTS ON YOUR BENCH
Compare the material you can identify.
Select up to three lots. “Reference” means your comparison baseline; the historical default is not a recommended best lot.
These base profiles assume non-tannin Type I sorghum. Grain colour does not establish tannin class. The historical panel does not contain the tannin or gluten documentation for a current purchase.
02 / READ ACROSS, THEN ASK WHY
The same label can hide a different lot.
03 / WHAT COULD CHANGE YOUR DECISION?
Turn the gaps into questions.
WHEN THE NEXT LOT NEEDS A DIFFERENT DIRECTION
04 / PUT MOISTURE ON THE SAME BASIS
What are you paying for dry malt?
Enter delivered prices for selected lots. This comparison removes the weight of water. It does not price fermentable extract or predict brewhouse efficiency.
See the calculation and its limits
Dry fraction = 1 − moisture % ÷ 100. Delivered price per kg dry malt = delivered price per kg received ÷ dry fraction. A price per lb is divided by 0.45359237 to express it per kg. Prices include the delivery costs you enter; currencies are never converted.
The historical fine-extract measurements came from a congress-style lab method with an enzyme limitation. They are useful comparisons within that report, not a reliable recipe-sizing model for your external-enzyme process.

A decision brief you can use.
THE EVIDENCE STAYS WITH THE LOT
Measured samples. Explicit limits.
The three starting records reproduce the March 28, 2019 Hartwick laboratory panel published by Gluten Free Brewer. They are historical samples, not current offers, universal red/white specifications or scored flavour profiles.
Scope, privacy and interpretation
Based on the sorghum-language-pages source reviewed 26 September 2026. The profiles assume non-tannin Type I sorghum. No red/white colour label is treated as tannin evidence. External enzymes own conversion; low diastatic power is not a rejection rule.
NR stays missing. Values below assay limits stay qualified text. Blank price stays unpriced. Matching comparison-group labels are a user assertion of method compatibility, not an automatic laboratory verification. Sensory observations require their own preparation and reference.
