Sensory Evaluation of Gluten-Free Malt
It also names a gap we cannot close alone: there is no published sensory lexicon for sorghum malt. Our own proposed standard requires scoring against one.
Why this page exists
This site's position is that in a gluten-free process external enzymes own conversion, which leaves the malt responsible for flavor, color, body, clean wort, and yeast nutrition. Our proposed evaluation standard makes that concrete in Principle 4: clean wort and real extract are gate criteria, and the flavor panel is what differentiates one malt from another.
A standard that demands a panel and never says how to run one is a position paper. This page is the missing half.
Taste the malt, not the beer
Fermentation is a mask. It adds esters and alcohols, strips volatiles, drops pH, and moves the whole flavor picture — so a malt judged only through finished beer is being judged through several other decisions at once. On a thin, dry sorghum base that is especially misleading, because the beer around the malt has so little to hide behind.
Three ways to taste malt directly, in increasing order of rigor:
Chew the grain. Free, immediate, and genuinely useful for detecting staleness, mustiness, or an obviously off lot. It tells you almost nothing about how the malt will express in wort.
Hot steep. Grind the malt, steep it in hot water under controlled temperature and time, filter, cool to a serving temperature, and evaluate the liquid. This isolates malt-derived flavor without mashing, without enzymes, and without yeast. It is the standard tool for comparing malts against each other, and it is what our proposed standard means by hot-steep aroma and flavor.
Reference mash wort. Run the SME reference mash, then evaluate the wort. Closer to brewing reality, more work, and it introduces the enzyme program as a variable — which is why the standard treats it as complementary to hot steep, not a substitute.
The American Society of Brewing Chemists publishes a hot steep malt sensory method with defined grind, ratio, temperature, time, and filtration. Use it rather than inventing local parameters — the entire value of a standardized steep is that your result can be compared with someone else's. We deliberately do not reproduce the method text here; obtain the current version from ASBC's Methods of Analysis, and state in your results which version you ran.
The method was developed on barley malt. Whether its parameters are optimal for sorghum is an open question, and one worth reporting on if you run both.
Running a panel that produces evidence
A brewery panel will never have the numbers of a research panel. It can still be honest, and honesty is mostly about controlling the ways a small panel lies to itself.

| Include a duplicate. | Put the same sample in twice under different codes. If a taster scores it very differently, that is your measurement noise — and it belongs in the report. |
| Include a reference. | A known malt in every session anchors the scale. Without it, session-to-session comparison is meaningless. |
| Six or more assessors. | Fewer is workable for screening but should be reported as screening, not as a panel result. |
| Score attributes, not preference. | "Do you like it" is not a malt measurement. Rate intensity of named attributes. |
| Taste before you discuss. | Independent scoring first, discussion afterward. The first confident voice in the room otherwise becomes everyone's score. |
| Report what you did. | Number of assessors, whether they were trained, the method version, the reference used, and the duplicate's spread. |
Report the panel as what it is. Six untrained brewery staff scoring blind is a legitimate, useful result — as long as it is described that way rather than as "a sensory panel found." Overstating a panel is the fastest way to make good work unciteable.
The missing lexicon
Barley malt has published sensory lexicons — agreed vocabularies with reference standards, so that "biscuit" means something transferable. Sorghum malt has none that we have been able to find. Our own standard asks for scoring against a published lexicon and then cannot name one for this grain, which is a defect in our standard as much as a gap in the field.
Until one exists, the honest options are to use a barley-malt lexicon and flag every term that fits badly, or to score a locally agreed attribute set and publish the definitions alongside the results so the numbers can at least be interpreted.
A starting descriptor set, offered for criticism
Drawn from this site's own documented sorghum observations on Sorghum Malt Flavor and Brewing Character. This is a draft for people to argue with, not a lexicon — a real lexicon needs reference standards, multi-panel validation, and agreement well beyond one site.

What a real lexicon would additionally need: intensity anchors, physical reference standards a panel can smell, and validation that assessors use the terms the same way. If you are running a program that could do this work, it is one of the most useful things anyone could contribute to gluten-free brewing.
The field's clearest missing tool. It needs a group with panel access, reference standards, and the patience to validate terms across sessions. Even a partial published vocabulary with definitions would be more than exists today. Get in touch — and see the other open questions in Research Asks.
What a panel cannot tell you
- Whether the malt is gluten-free. Sensory has no role in that chain whatsoever — see Gluten Testing Methods.
- Whether the malt will convert. That is extract and enzyme territory, and Principle 4 treats clean wort and real extract as gates the malt passes before flavor differentiates it.
- How the malt will behave in your beer. Hot steep isolates the malt deliberately; that is its strength and its limit.
- Whether a lot is safe. Off-flavor can indicate a storage or mycotoxin problem, but a clean taste is not evidence of safety — see Grain Storage, Germination, and Mycotoxin Controls.

The existence of a standardized ASBC hot steep malt sensory method is referenced, not reproduced: the method text is ASBC's and should be obtained from their current Methods of Analysis. This site has not run a formal hot steep comparison, and states no result from one. The observation that the method was developed on barley malt, and that its suitability for sorghum is untested, is offered as an open question rather than a criticism of the method.
The panel practices listed are general sensory-science discipline applied to a small-brewery setting; they are this site's practical guidance, not a validated protocol, and no claim is made that a six-person untrained panel produces research-grade data — the page argues the opposite.
The draft descriptor set is derived from this site's own documented sorghum flavor observations and is explicitly labelled as a draft for criticism rather than a lexicon. The claim that no published sorghum malt sensory lexicon exists reflects our own literature survey and could be wrong — if one exists, we want to know, and the page should be corrected rather than defended.
