Bard's 2010 Malt Analysis: The Earliest Sheet in the Archive
This is a working production document, not a laboratory certificate — one spreadsheet with an in-house test block and a block headed "RND RESULTS" dated May 21, 2010 for "BARD'S MALTED SORGHUM." Working documents skip the labels a certificate carries, so this page follows a strict rule: every value is published exactly as recorded, units are marked "unlabeled" where the sheet gave none, and anything interpretive is stated as interpretation, clearly separated from the data.

Interpretation notes — stated as interpretation, not data
- The duplicated enzyme columns: the in-house block's second alpha/DP values (9.5 and 0) match the RND block exactly. The most natural reading is that the RND numbers were copied beside the in-house ones for comparison — but the sheet doesn't say so, so that reading is ours, not the record's.
- The two S/T entries: 0.20 in-house against 17.4 in the RND block. The in-house day-2 soluble protein over total protein (2.2 / 10.8) is 0.204 — consistent with the in-house S/T being recorded as a ratio where the RND block used percent. Again: consistent with, not proven by, the sheet.
- DON 0.1 carries no unit. Deoxynivalenol is conventionally reported in ppm (mg/kg), and 0.1 ppm would sit far below every regulatory advisory level — but the sheet does not state the unit, so the number is published unitless and the convention is noted, not assumed.
- Enzymes were already the story in 2010. The RND block's DP of 0 and alpha of 9.5 are the same fact the 2019 Hartwick panel measured as below-quantification nine years later — the enzyme deficit this site's doctrine is built on was on the brewery's own worksheets from the start.
- The sensory line is a period record — "somewhat floury, starchy, light, thin" is a rare written sensory observation on early production sorghum malt, preserved verbatim.
- What we do not know: which lot or cultivar this malt was, who produced the RND results, and the basis for several unlabeled values. Those blanks stay blank; a recovered answer would be logged as a correction, never silently filled.

Original spellings ("Protien," "FRIABILTY") are preserved and marked. The document is a Bard's internal record and is Bard's to publish; the source of the "RND RESULTS" block is not identified on the sheet and is therefore not attributed to any laboratory.
