Sorghum Malt Evaluation Methods: A Field Survey

Sorghum malt has been evaluated many ways — and every one of them was built for a different question than the one modern gluten-free brewing asks. This survey reviews each methodology on its own page: what it is, where it came from, what our datasource shows it measuring, and where it fits.

No lab ever sat down to design an evaluation method for sorghum malt as a character ingredient in an external-enzyme process. Instead, the field assembled a patchwork: South Africa's opaque-beer standard, the foundational CSIR assays it codified, barley institute methods applied off-label, academic lab conventions, and commercial certificate-of-analysis practice. Each has real strengths inside its original context. None was built for ours — which is why the informal fallback, for years, was ask Bard's.

What the patchwork tells you

Three patterns run through every page above. First, every method descends from an enzyme-first question — how much conversion power does this malt carry? — because every originating context (opaque beer, barley brewing, cereal-chemistry research) needed exactly that. Second, units fragmented because methods were borrowed rather than shared: SDU, °Lintner, °WK, and ASBC numbers coexist without clean conversion. Third, nobody measured the drinkability set — wort clarity, flavor contribution, FAN as a nutrition planning number — as first-class outputs, even though those decide whether a modern sorghum beer succeeds.

That three-part gap is what the proposed Sorghum Malt Evaluation Standard (GFB-SME) exists to fill.
