Teff (Eragrostis tef) is among the smallest cultivated cereal grains and the staple of Ethiopian cooking, where its flour becomes injera through a fermentation tradition that is centuries older than any malting literature. It is naturally gluten-free, and its map has a distinctive shape: the malting science is real but concentrated — the modern malting studies we have found cluster in one decade — while the breeding and genomics infrastructure is stronger than any grain this size deserves, running from Ethiopia's national program through a Swiss-funded improvement project to two published genomes. The United States actually grows teff at commercial scale, led by an Idaho company that puts its own run at some forty years — and the grain has already reached one American gluten-free brewhouse. What remains unbuilt is the bridge: between the grain in American fields and the malting science on European shelves we have yet to find a US malthouse or a lot standard.

The physical home of the federal teff collection: the Western Regional Plant Introduction Station, on the Washington State campus. The unit page describes the station and its holdings but does not itemize teff; what ties it to this grain is downstream — when the UNR program phenotyped 368 teff accessions in 2025, this is where the seed came from. Donald Danforth Plant Science Center — St. Louis, Missouri. Runs its own teff program, not just a genome credit: Duguma's group used genome editing to produce semi-dwarf teff for lodging resistance, received USDA-APHIS regulatory clearance in 2023, and in 2024 took a $4.9 million Gates Foundation grant with EIAR to move the trait into farmer-preferred Ethiopian lines — the same center running sorghum resilience programs in our sorghum directory. Penn State University. Ethiopian Institute of Agricultural Research — Debre Zeit, Ethiopia. The oldest and largest teff research center in the world, with scientific tef research running since the late 1950s: EIAR's Debre Zeit Agricultural Research Center (in modern Bishoftu) houses the National Tef Research Program, coordinates the national breeding effort, and co-releases the varieties its partnerships develop. Its signature release is Quncho (2006) — an intra-specific cross of two Debre Zeit lines, described by its release record as the first popular tef variety in Ethiopia — and the center has hosted all three International Workshops on Tef (2000, 2011, 2019). The TIRR extension package — Ethiopia's yield campaign. The Ministry of Agriculture and the Agricultural Transformation Agency's national teff program: the TIRR package (Teff, Improved seed — Quncho — Reduced seed rate, Row planting) reached 70,000 farmers in its 2012 launch, with the pre-scale-up phase reporting yields 65% above the national average. Syngenta Foundation for Sustainable Agriculture. The field's one long-horizon private funder: has backed the Tef Improvement Project continuously since 2006, most recently with a further 2.75 million Swiss francs — the closest thing teff has to buckwheat's Koto model of a single committed patron. The field's longest-standing US private funder: tef support dating to the 1990s through successive CCRP grants, whose recorded results include 85 crosses, 91.08 tons of seed distributed, and three released varieties. Joint FAO/IAEA Programme — mutation breeding. The nuclear-techniques route into tef: irradiation at 200–2000 gray generated the diversity behind the released variety Tesfa, with the FAO/IAEA plant-breeding programme supporting the work inside the Bern–EIAR pipeline. IFPRI — Ethiopia Strategy Support Program (ESSP). The policy-and-economics program of the teff field: co-organizer of the 2019 Third International Tef Workshop and publisher of the standard teff nutrition reference — the program that studies teff as an economy, not just a crop. The count, challenged — twice: this page first said "four" — then we pushed on our own claim and found three more inside the field's funding acknowledgments, and two more (NSF, then IFPRI-ESSP) surfaced as the projects section grew — nine. The sharper claim keeps surviving: every funder here backs breeding, germplasm, or food security. We checked for a teff checkoff, a commodity board, and a growers' association and found none; we have found no brewing-industry funding anywhere in the teff literature. That absence is a finding, not an oversight; see Research gaps.

5. Industry & Supply Chain — the commercial layer

The honest state of it: the US grows teff at genuine commercial scale — but almost entirely as either hay or flour. We have found no US malthouse offering teff malt: neither of the dedicated gluten-free malting operations in our millet and rice directories lists it. Whether the one commercial teff beer we have found used malted or unmalted teff is not documented in anything we have found. The grain exists; a published teff malting chain does not.

Proof the chain can work: Ground Breaker Brewing — Portland, Oregon. The dedicated gluten-free brewery brewed "By the Sea," a teff gose (coriander, lemon peel, salt), using teff in the grain bill for the style's wheat-like character. Per the linked coverage the brewery ran the teff whole-grain through an old cornmeal mill rather than malting it — its malted grains are listed as millet, buckwheat and rice — so this is unmalted teff in a commercial grist. The Teff Company (Maskal Teff) — Idaho. The US teff anchor: founded by Wayne Carlson, who by the company's account lived in Ethiopia in the 1970s — with first seed sourced from the USDA seed bank on the Washington State campus, the same Pullman collection this page's science runs on — family-run for some forty years, the largest US producer by their own account, and milling flour distributed nationwide. In the absence of any growers' association, its contract grower network across Idaho, California, Nevada, Washington, Arizona, and Oregon is the organized layer of American teff farming. Tenera Grains (Teffola) — Michigan. The eastern data point: a seventh-generation Addison, Michigan crop farm that diversified into teff in 2015 at 33 acres, milling and marketing its own teff products — proof the crop grows commercially outside the arid West. The export ban that makes US teff American. Ethiopia — the crop's homeland and dominant producer — banned exports of food grains including teff, indefinitely, after the 2008 global food-price crisis, to protect domestic food security. The structural consequence for this site's readers: any US teff supply chain is a domestic one by necessity, not by preference. The Dutch teff patent dispute. The cautionary tale of teff's supply chain, and one of the most-cited crop "biopiracy" cases anywhere: a Dutch company (HPFI) signed an access-and-benefit-sharing agreement with Ethiopian institutions in 2005, patented teff-flour processing in Europe (applied 2003, granted 2007), and went bankrupt — while the patents lived on and stood in the way of Ethiopian exports. A Dutch court ruled the patents invalid for lack of inventive step (decided November 2018, announced February 2019); equivalents in other European countries survived the ruling. The forage detour. Most US teff acreage is grown as horse and cattle hay, not grain — extension programs at Oregon State and Utah State publish teff forage guides, not malting guides, and a commercial forage-seed layer exists to serve it: seed companies such as Warner Brothers Seed (Oklahoma) market teff grass nationally as a fast, multi-cut annual hay crop. For a buyer this matters twice over: the agronomy is proven across the West and the seed is easy to buy — but the harvest, handling, and quality infrastructure was built for hay bales, not food-grade grain lots. The field's convening tradition runs through one town on a roughly decadal beat: the 2000 International Workshop on Tef Genetics and Improvement (proceedings: Narrowing the Rift), the 2011 Second International Workshop (23 manuscripts, a 44-point research roadmap), and the 2019 Third International Tef Workshop in Bishoftu — organized by EIAR's National Tef Research Program with IFPRI-ESSP, drawing hundreds of local and international stakeholders to draft a comprehensive Tef Book and research roadmap. The gap, checked and restated: we have found no US teff growers' association and no US commodity organization — in Ethiopia the crop is organized through cooperatives rather than a crop association, and the international workshop series meets roughly once a decade rather than annually. Between workshops, the field convenes inside Ethiopia's national program and individual university groups. US teff agronomy was proven by the forage market, and US gluten-free malting was built on millet and rice — the two infrastructures run side by side, unconnected in anything we have found. Research gaps — where the field's coverage runs out

No published US teff malting — anywhere we can find. We have found no US malthouse listing teff malt; the malting literature we have found is European and stops short of commercial practice. How the one commercial teff beer processed its grain is undocumented — an open question a conversation with the brewery would answer. The grain is grown here; published teff malt is not.

The malting corpus is concentrated and quiet. Most of teff's brewing science came from one Weihenstephan group in roughly a decade, with the 2017 Witkop study as the latest substantial addition we have found. We have found no active teff malting research program anywhere today.

Grain identity is underdeveloped. Most US acreage is forage; the food-grade layer is small and flour-oriented. Variety, storage, and lot data of the kind the 2013 JIB study showed matters for malt quality is not part of how US teff currently trades.

No funder owns the brewing question. Teff's nine documented funders all back breeding, germplasm, or food security. We have found no funder of teff malting — the gap between the field science and a brewer's kettle has, as far as we can tell, no sponsor.

The Ethiopian fermentation tradition is scientifically underexplored for brewing. Injera fermentation microbiology is studied; its implications for teff brewing largely are not — a question the field has left open.
