Millet Research Directory

Who is working on millet — and where the work lives. The millet counterpart to our sorghum directory: institutions, researchers, active projects, funders, industry players, organizations, and literature, mapped with the same rules — brief, factual, dated entries, every one linking to a primary source.

Millet occupies the opposite position from sorghum: commercially, millet malt is the working base of much modern US gluten-free craft brewing — produced, sold, and brewed on today — while its published brewing science is thinner than sorghum's decades-deep academic corpus. This directory maps that inverted landscape honestly: a strong commercial layer, a concentrated research layer, and the gaps between them.

How to read it: the same seven categories as the sorghum directory, with the same rules. Entries are brief, factual, dated, and linked to primary sources. Descriptions are not endorsements.

Coverage is US-centered by design — this site works in the American supply chain — with international anchors included where the science is foundational.

A structural difference from sorghum: we know of no national millet checkoff — sorghum's producer-funded research board has no millet equivalent — so millet research leans more heavily on federal and state programs, and the grower voice runs through associations rather than a checkoff. That absence shapes this whole page.

5. Industry & Supply Chain — the commercial layer, where millet leads every other gluten-free grain

This is where millet's map inverts sorghum's: commercial gluten-free millet malt exists today — grown at scale on the High Plains, malted at dedicated facilities, and brewed into award-winning beer by dedicated gluten-free breweries. The chain runs end to end, and every link below is documented.

BevSource. The beverage development and sourcing firm that takes gluten-free beer projects from concept to production — a major player in how new gluten-free brands actually get made. Their own published analysis credits large-scale millet malting with enabling the modern all-grain era: early gluten-free beer was brewed on sorghum extract because no gluten-free malt supply existed, and when malted millet arrived at scale, the market moved to it — which is why today's production runs on millet and rice while sorghum malt remains the unbuilt supply chain. Research gaps — where the field's coverage runs out

These are the gaps we have found and documented — if we have missed something, tell us:

  • Millet's gap is the mirror of sorghum's. Commercial gluten-free millet malt is produced at scale today — but on a thinner published brewing-science base than sorghum's decades-deep corpus. Production runs ahead of the public literature.
  • The same information layer is missing. As with sorghum, we have found no widely used per-lot reporting practice for millet malt buyers — the problem this site's Lot Reporting Standard exists to solve, across gluten-free grains.
  • No national millet checkoff that we know of — millet research has no producer-funded board comparable to sorghum's, thinning its dedicated funding channels; the grower voice runs through associations instead.
  • No public millet malting dataset that we have found. Agronomic and genebank data exist — the federal germplasm collections and UNL's variety trials, both listed under Literature — but we have found no public dataset of millet malting quality: the millet equivalent of the Madison screening does not exist to our knowledge. An open, fundable gap, made sharper by the fact that millet is the grain US gluten-free brewing actually runs on.

Run a millet program, lab, project, or company we should list? Entries are added on merit once verified — tell us about it.

Entries are added as they are verified, never to pad the count. A listing here is a map reference, not a citation: this directory deliberately maps the whole millet research world — a wider circle than the specific evidence our brewing guidance is built on, which every guidance page cites directly.
