Where internal enzymes maps a science, this page maps an industry with a science attached. When a gluten-free malt cannot deliver the enzyme activity a recipe needs, the working answer across the industry is a measured addition from an industrial producer. That layer has its own research world — application studies, process integration, raw-grain brewing where an enzyme package replaces malting entirely — and almost none of it overlaps with the university malting science the grain directories map. This page charts it honestly: described, never endorsed.

Research gaps — where the field's coverage runs out

The dose question is unpublished. Every gluten-free brewery running added enzymes has dose data; we have found no published, systematic dose-reduction study against measured conversion targets. That is this site's Research Ask 6, still open — and its companion, Ask 7, asks the same discipline of the 190°F mash baseline.

The application literature is sorghum-heavy — and our first claim about millet broke on checking. An earlier version of this note said millet had almost no added-enzyme literature; a wider sweep found the granule-degradation microscopy, the 2020 sugar-balance study, and the 2025 adjunct work, and they are now in this page's literature. What survives the correction: the corpus still centers on sorghum, much of it predates the modern gluten-free industry, and no added-enzyme study we have found addresses the malted-millet-based grists US gluten-free brewing actually runs on.

No public funder touches the wing. The funding section's honest shape, restated as the gap it is: the products carrying commercial gluten-free brewing are developed entirely on private R&D, and the open questions have no sponsor.

Gluten-free-specific product guidance is scarce. The producers' technical sheets address barley brewing and general adjuncts; we have found no producer publishing application guidance written for gluten-free grists specifically.

The processing-aid frame hides the data. Because enzymes never reach the label, no public record shows which products the industry actually uses at what rates — the same invisibility that protects proprietary process also starves the field of shared knowledge.
