Like rice, corn has a century of history inside American lager as an adjunct; unlike rice, its life as a gluten-free malt is barely documented at all. Research gaps — where the field's coverage runs out
These are the gaps we have found and documented — if we have missed something, tell us:
- The great corn irony. The most researched crop on earth, with the deepest producer-funding apparatus in American agriculture, has — as far as we have found — no funded malting or brewing research at all. Corn has been inside American lager for over a century, and nobody studies it as malt.
- Corn malt barely exists commercially. One dedicated gluten-free malthouse lists it; the adjunct trade dwarfs it a thousandfold. The supply gap sorghum has, corn has deeper.
- The science says it could work. Maize malts comparably to sorghum at equal nitrogen, and 100% corn beers exist in the literature — the feasibility evidence is published and unpursued.
- No funded, sustained corn-brewing program exists. The UAM Mexico City group's beer studies are the closest thing, and Pretoria's canon includes maize — but nowhere is corn brewing anyone's funded mission; the literature beyond those threads is scattered across continents.
- The same information layer is missing. No per-lot reporting, no corn malt standard, no malting-quality dataset — the problems this site's Lot Reporting Standard exists to solve, across gluten-free grains.
