From Ivory 7 to Blue Milo #4: Why Bard's Changed Sorghum
This was not a decision made from a seed name, a field sheet, or one laboratory number. Bard's followed the material through malting and beer. According to Craig's firsthand account, Bard's then completed 60-, 180-, and 480-barrel production runs, and Blue Milo #4 became the production cultivar after its first batch.
The practical rule is simple: keep the material identity attached to the result from seed and lot through malt, wort, beer, sensory review, and the production decision. Do not promote a grain beyond the strongest evidence tied to it.
Ivory 7: the production baseline
Ivory 7 was Bard's private-label name for Fontanelle 5040C. It was not a brief trial. Bard's used it in recurring commercial production, tested it through malt-quality work, and kept using it because it delivered consistency.
The replacement need came from outside the brewhouse. Craig recalls that seed products often had about a seven-year commercial cycle; Bard's used 5040C for roughly fourteen. In his account, the manufacturer stopped producing it as newer genetics offered better yield and disease resistance.
Bard's could not keep an older hybrid alive through buying power. Its demand was measured in thousands of bushels, while the seed business rewards materials used at vastly larger scale. A brewing ingredient can work well and still disappear because the agricultural market has moved on.
The replacement had to work for the farmer and the beer
Bard's evaluated two connected systems:
- The farm: would the hybrid grow well, yield enough per acre, and give the farmer a viable reason to plant it?
- The malt and beer: would it malt consistently and produce better flavor?
In 2019, Bard's malted and compared multiple red sorghum candidates against Ivory 7. Several were close. They were not failures; Bard's had to choose the best overall fit.
The winner became Blue Milo #4, Bard's private-label hybrid name. Its underlying hybrid identity remains confidential.
Blue Milo #4 did not win every number
Some submitted-sample analyses favored Ivory 7 on starch or extract potential. Bard's chose Blue Milo #4 anyway because flavor was the goal.
Craig remembers the flavor improvement as roughly 15 percent—an explicitly subjective estimate—and calls it a very strong upgrade. Blue Milo also brought the stronger overall farm and supply package: growability, yield per acre, farmer economics, and an expectation of longer availability because the seed supplier had broad demand for it.

The lesson is not that extract does not matter. It is that one convenient number cannot make the whole production decision. The material has to survive the farm, malt, beer, and supply system—and the finished beer still gets the final vote.
It reached production proof
Blue Milo #4 was malted, mashed, fermented, packaged, and used in production beer. According to Craig's firsthand account, Bard's completed 60-, 180-, and 480-barrel runs. This was not a field-sheet preference or a bench-only result.
That completed chain supports the replacement decision:
- the candidate stayed tied to the selected material;
- the selected material became Blue Milo #4;
- Blue Milo #4 stayed identified through malt and brewing;
- finished beer confirmed Bard's flavor preference;
- repeated production showed that the result could move beyond a first trial.
Blue Milo #4 was the better production choice for Bard's under these conditions. That is a strong commercial conclusion, not a universal ranking for every maltster, brewery, crop year, or process.
What to carry into the next material decision
Preserve identity through beer
Do not let a cultivar or private-label name disappear between seed, grain, malt, and brewing records. If the identity cannot be tied to the finished beer and the production decision, the result cannot support a named-material claim.
Test the whole system
Agronomic success is not brewing proof. Malt analysis is not finished-beer proof. Finished-beer preference without repeatable supply is not a production solution. The decision becomes credible only when the same material survives the farm, malt, finished-beer, and repeatable-supply gates.
Let flavor lead without hiding the tradeoff
Bard's accepted an extract disadvantage because the flavor and total production package were better. Record that tradeoff; do not edit it out after choosing the winner. Flavor was the goal, but the farm and supply system still had to make that flavor repeatable.
Treat availability as part of the design
Ivory 7 worked. It was replaced because genetics and the seed market moved on. Ingredient development therefore has to ask whether growers can make money planting the material and whether the seed supplier has enough wider demand to keep producing it.
