Grain Sorghum and Sweet Sorghum

Sorghum is one species doing two completely different jobs. Grain sorghum makes the starchy seed we malt and mash. Sweet sorghum makes a sugary stalk that gets pressed and boiled into syrup — no malt, no mashing, no enzymes. Both are correctly called "sorghum", and that is the whole problem.

If you have ever seen a gluten-free beer criticised for being "made from sorghum syrup", this page is the distinction behind that criticism — and the reason it does not apply to malted grain.

The two crops

Both are Sorghum bicolor. Breeding sent them in opposite directions: one puts its energy into a starchy seedhead, the other into sugar in the stalk.

Forage sorghums and broomcorn are further types of the same species, bred for biomass and for brush fibre respectively. The point is the same: "sorghum" names a species, not an ingredient.

Why sweet sorghum makes syrup and grain sorghum cannot

Sweet sorghum stalks are milled much like sugar cane, and the juice is boiled down hard: about eight gallons of juice make one gallon of syrup.1 Getting the juice out is the inefficient part — studies of the common press type recover typically less than half of what is in the stalk.2

Nothing in that process is brewing. There is no steeping, no germination, no kilning, no mash, and no conversion step, because there is no starch to convert. It is closer to making maple syrup than to making malt.

Grain sorghum cannot be run through it at all. Its sugar is not in the stalk; it is starch inside the seed, and the only way to a fermentable wort is the long way — malt the grain, gelatinize the starch, and give conversion an enzyme source. Sorghum syrup is not molasses, either

Sorghum syrup is often called "sorghum molasses", which muddies a third thing. Molasses is a by-product of refining cane or beet sugar. Sorghum syrup is the whole evaporated juice, not a by-product of refining anything. Neither is malt.

Why this matters for what you buy

Three different products can all end up shortened to the word "sorghum" on a label or in a conversation, and only one of them is ours:

That middle row is what much early gluten-free beer was actually built on, and it is why the category earned a reputation for thin, one-note beer: a fermentable with no malt behind it contributes sugar and very little else. The word that settles it is wort. Only malt makes wort. A syrup pressed from a stalk is not wort, and an extract from unmalted grain is not wort. When we describe what Bard's brewed from, we say malted sorghum extract — concentrated wort from sorghum malt — and we never shorten it, because every shortening lands on one of the other two rows.
