Maltsters

Who malts gluten-free grain, at every scale. The narrowest layer in the whole chain — grain is abundant and brewers are willing, and the shortage of people who will malt it is the bottleneck this site exists to document.

Malting is where gluten-free brewing is decided. The grain exists in enormous quantity; the breweries exist; what does not exist, at any scale that resembles barley's, is the malting layer between them. This page maps the people and companies who do it anyway — dedicated gluten-free malthouses, contract maltsters who will run a clean batch, and the home maltsters proving methods the commercial layer hasn't industrialized.

How to read it — entry rules, and what a listing means

Two kinds of entry. Where someone is already described in the research directory, this page carries a pointer — name, role, subjects touched, link to the page that owns the description. Where they are not, this page carries the entry itself. Nothing is described in two places.

Organizations sit inside the role they perform. A malthouse belongs here alongside the maltsters who run it.

Described, never endorsed. A listing is a map reference, not a recommendation, and implies no relationship with this site. Gluten-free status is reported as the malthouse states it, never as our assurance — verification is its own discipline.

What qualifies. A public-facing malting operation, commercial offering, or documented body of work. Private individuals are not listed without consent.

Working with them — how a brewer commissions malt

Not yet written. When it is, it will answer: how contract malting works, what a maltster needs from you (grain, volume, lead time, specification), what to ask for on the certificate of analysis, and how to verify a gluten-free claim rather than accept it. This is where the site's existing sourcing guidance belongs.
