Hops and Yeast for Sorghum Malt

Hop and yeast selection is usually treated as independent of base malt. In sorghum brewing it isn't. Here is what we actually used across production, what we deliberately avoided, and the open question we never got to test properly.

Barley brewers inherit a buffer they rarely think about: a malt-forward, protein-rich, faintly sweet base that softens hop character and gives yeast a familiar nutrient bed. Sorghum malt gives you a cleaner, drier, thinner canvas. Everything you hang on it shows more — which makes hop and yeast choices louder, not quieter, than in a barley beer.

What production actually used

Target profile for the flagship: 18 IBU total, five of which came from the tetra extract, on a 10.5°P wort finishing near 4.7% ABV. That bitterness number matters — it is deliberately modest, because on a sorghum base there is less malt sweetness to balance against.

The observation we never got to test

Craig's field experience, stated as experience and not as a finding: German hop varieties worked well with sorghum malt. Some others did not — Saaz in particular clashed.

We do not have controlled data for that, and we are not going to pretend otherwise. What we have is repeated brewing at commercial scale and a consistent impression that certain hop character sat badly on a sorghum base while German varieties integrated cleanly.

A plausible mechanism, offered as hypothesis only: sorghum's thinner body and lower residual sweetness leave hop character less buffered, so varieties whose profile depends on a malty counterweight can read harsh, grassy, or disjointed. That would explain why restrained noble and noble-adjacent varieties tend to sit well. It would also be testable in a weekend by anyone with two kettles.

Research wanted: hop varieties against sorghum malt

This is one of the cleanest open questions on this site. Brew the same 100% sorghum malt base, split it, and bitter and finish each half with a different hop variety — one German, one from the group that seemed to clash. Report what happened. Yeast: two things that matter more than strain

Gluten status is not optional. Brewing yeast is grown on a substrate, and that substrate is frequently barley wort. A gluten-free beer fermented with yeast propagated on barley wort has a documented gluten pathway. Nutrition is a design input, not an afterthought. Sorghum wort runs roughly half of barley's free amino nitrogen. A strain that ferments barley wort cleanly may throw stress character on sorghum wort at the same pitch rate — which is why production carried a yeast nutrient addition as standard, not as a rescue. How to choose, on a sorghum base

  1. Start restrained on bitterness. There is less malt sweetness to balance against; what reads as moderate on barley can read as sharp here.
  2. Swap ~5 IBU to tetra extract for foam, and trim the kettle charge to keep net bitterness on target.
  3. Prefer varieties that don't need a malt counterweight until you have your own results — noble and noble-adjacent German varieties are where our experience points.
  4. Verify yeast gluten status in writing, then choose the strain for the beer.
  5. Plan the nutrient addition with the recipe, not after a stuck fermentation.
  6. Change one variable per batch and write it down. That is how the impression above becomes evidence.

The German-varieties-suit-sorghum and Saaz-clashes observation is Craig's commercial field experience across many batches, not a controlled comparison, and the proposed mechanism behind it is an untested hypothesis stated as such. Alpha acid percentages vary by crop year; treat the recorded value as historical, not as a specification.
